Learning to be a Vegetarian with Hello Fresh

I’ve officially become a vegetarian.  I feel like making the change snuck up on me but looking back I could see the transition in my eating from the past few months. To be honest, I have been so lost these last couple of weeks creatively in the kitchen.  I love to cook, and to be honest, I’m a great cook, but all of my life cooking revolved around the protein aspect of the meal first, and then the vegetables.  Because of this new lifestyle change, I decided to give Hello Fresh a try with the goal of getting new inspiration on how to eat and cook as a vegetarian!


I was so excited when my package from Hello Fresh came in, I just needed that extra boost of inspiration in the kitchen. Hello Fresh packaged everything beautifully and each box contained individual meals with two portions for each. I don’t eat very large portions either so for me this ended up being four portions each! That’s 12 meals, lunches and dinners!  As I selected the 3 meal option.

The first recipe that I tried was the One Pan Mushroom Ravioli Gratin.  This was actually the first time that I had used a broiler! But this recipe was super easy to make and one that I will have on repeat. It also showed me how to do a Stroganoff sauce in a healthier way! I’m a HUGE mushroom fan so this was perfect and right up my alley!

The second recipe was a Persian Spiced Cauliflower Quinoa Bowl. I’m not a fan of quinoa, but I tried it anyways. I hadn’t been able to eat avocado but I loved it like this with the cilantro and lime! Although this wasn’t my favorite I did like the spinach salad and the avocado crema!

The third and final recipe was the Patatas Bravas and Crispy Artichokes. This ended up being my favorite! It’s an amazing combination of flavors that had me eating almost the entire thing! I will definitely be making this one on repeat for dinners and lunches. It was this kind of recipe that made the entire package worth it to me.

Although I don’t recommend relying on delivery food services on a regular basis I did love that Hello Fresh helped me step out of my comfort zone and get some creativity flowing for my new lifestyle choice.
